INGREDIENTS:

focaccia loaf
8 slices
Provolone cheese (optional)
1/2
head Boston lettuce
1
small eggplant, sliced and grilled or pan seared
1
small zucchini, sliced and grilled or pan seared
1
yellow pepper, cut into 8 pieces and grilled or pan seared
10 slices
Mastro® Prosciutto Cotto
8 slices
Mastro® Genoa Salami
8
black olives, pitted
8
leaves fresh basil

DIRECTIONS:

  1. Stack the eight slices of Salami on top of each other. With a knife, cut a slit from the centre of the stack, outwards throughout the entire stack. Roll each slice into a cone, secure with a toothpick if necessary and set aside.
  2. Evenly layer the Provolone (optional) on the focaccia, followed by the Boston lettuce, eggplant and zucchini.
  3. Arrange the Prosciutto Cotto on top of the vegetables.
  4. Carefully cut the sandwich into eight pieces.
  5. Garnish each piece with a Genoa cone, a piece of pepper, a black olive and a basil leaf.
