INGREDIENTS:

8 slices
Mastro® Pancetta
2 cups
romaine lettuce, cut small
1/2 cup
Caesar dressing
8 pcs
Parmesan, thinly sliced or shaved
8
herb-garlic croutons

DIRECTIONS:

  1. Place a mini muffin tin upside down on a cookie sheet (this will catch excess drippings). Place one thin slice of Pancetta on top of each cup and gently press to form.
  2. Bake in oven at 375 F until crispy, about 8-10 minutes.
  3. Remove the crispy Pancetta cups from the muffin tin and allow to cool on paper towel.
  4. In a mixing bowl, toss Caesar dressing with romaine lettuce and place in Pancetta cups. Garnish with Parmesan and a crouton.
Tip: Use a vegetable peeler to shave the Parmesan.
