Pancetta Caesar Cups

romaine lettuce, cut small
Parmesan, thinly sliced or shaved
- Place a mini muffin tin upside down on a cookie sheet (this will catch excess drippings). Place one thin slice of Pancetta on top of each cup and gently press to form.
- Bake in oven at 375 F until crispy, about 8-10 minutes.
- Remove the crispy Pancetta cups from the muffin tin and allow to cool on paper towel.
- In a mixing bowl, toss Caesar dressing with romaine lettuce and place in Pancetta cups. Garnish with Parmesan and a crouton.
Tip: Use a vegetable peeler to shave the Parmesan.
