mayonnaise

grainy Dijon mustard

pretzel buns, halved and toasted
1 cup
baby arugula
8 slices
Gruyere cheese

DIRECTIONS:

Caramelized Onions
  1. Melt the butter in a large, heavy-bottom skillet set over medium-low heat. Add the onions, salt and pepper. Cook, stirring often, for 30 to 40 minutes or until very soft and golden brown. Makes 1 cup.
Sandwich
  1. Stir the mayonnaise with the mustard. Spread over the cut side of each bun. Divide arugula, cheese, caramelized onions, Prosciutto and fried eggs evenly among the bottom halves of the buns; cap with the top half.
