INGREDIENTS:

large round Italian loaf
1/2 cup
mayonnaise
1/4 cup
prepared pesto
1 cup
leafy green lettuce, thinly sliced
1 cup
radicchio, thinly sliced
2
tomatoes, sliced
1/2 cup
green olives, pitted and sliced
1 cup
marinated artichoke hearts, chopped
6 slices
Provolone cheese
12 slices

DIRECTIONS:

  1. Cut bread in half horizontally. Hollow out loaf, leaving a 1-inch (2.5 cm) border. Stir the mayonnaise with the pesto. Brush all over the inside of the bread halves.
  2. Toss the lettuce with the radicchio; spread over the bottom half. Top with tomatoes, olives, artichoke hearts, provolone and ham. Cap with remaining half. Wrap tightly in plastic wrap and press down on sandwich. Chill in the refrigerator for 1 to 2 hours. Cut into 6 wedges.
