Savoury Salami Wafflewich

1 3/4 cups
buttermilk, room temperature
cloves garlic, minced
fresh parsley, finely chopped
green onion, finely chopped
savoury waffles (see original recipe below)
fresh basil, chopped
lemon zest, finely grated
green leaf lettuce leaves
large tomato, sliced
slices provolone cheese
ripe avocado, sliced
hard boiled eggs, sliced
Deli Naturally!™ Mastro Genoa Salami
- Stir the flour with the cornstarch, baking powder, sugar, salt and baking soda. In a separate bowl, whisk the buttermilk with the eggs, butter and garlic. Stir the buttermilk mixture into the dry mixture until just combined. Fold in parsley and green onion.
- Cook waffles according to the manufacturer’s instructions. Batter makes 8 waffles. Hold in a warm oven.
- Stir the mayonnaise with the basil, lemon zest and pepper.
- Layer the lettuce, tomato, cheese, avocado, egg, Salami and mayonnaise mixture on 4 of the waffles. Cap with the remaining waffles.
