all-purpose flour
1/4 cup
cornstarch
1 tbsp
baking powder
1 tbsp
sugar
1 tsp
salt
1/2 tsp
baking soda
1 3/4 cups
buttermilk, room temperature
3 eggs
eggs, beaten
1/3 cup
butter, melted
2
cloves garlic, minced
1/2 cup
fresh parsley, finely chopped
1/4 cup
green onion, finely chopped
Sandwich
8
savoury waffles (see original recipe below)
1/4 cup
mayonnaise
2 tbsp
fresh basil, chopped
2 tsp
lemon zest, finely grated
1/4 tsp
pepper

green leaf lettuce leaves
1
large tomato, sliced
4
slices provolone cheese
1
ripe avocado, sliced
4
hard boiled eggs, sliced

DIRECTIONS:

Waffles
  1. Stir the flour with the cornstarch, baking powder, sugar, salt and baking soda. In a separate bowl, whisk the buttermilk with the eggs, butter and garlic. Stir the buttermilk mixture into the dry mixture until just combined. Fold in parsley and green onion.
  2. Cook waffles according to the manufacturer’s instructions. Batter makes 8 waffles. Hold in a warm oven.
Tip: Served best with freshly made green onion and parsley waffles. For a quicker alternative, use a prepared savoury waffle mix, or frozen waffles.
Sandwich
  1. Stir the mayonnaise with the basil, lemon zest and pepper.
  2. Layer the lettuce, tomato, cheese, avocado, egg, Salami and mayonnaise mixture on 4 of the waffles. Cap with the remaining waffles.
