Sandwiches épicés à la mortadelle et au rapini sur focaccia

INGREDIENTS

  • 1/2 tasse (125 ml) d'huile d'olive, divisée
  • 4 gousses d'ail finement émincées
  • 1/4 c. à thé (1 ml) de flocons de piment fort
  • 1 bouquet de rapini, paré
  • 1/2 c. à thé (2 ml) de sel et de poivre
  • 1 fougasse au romarin (12 pouces ou 30 cm), coupée en moitiés et légèrement grillée
  • 8 tranches de provolone
  • 12 tranches de Mortadelle piquante San DanieleMD
  • 1/2 tasse (125 mL) de rondelles de piments forts marinés

Directions

  • Chauffer 1/4 tasse (60 ml) d'huile dans une grande poêle antiadhésive à feu moyen; cuire l'ail et les flocons de piment fort pendant 1 à 2 minutes ou jusqu'à ce que le mélange soit doré. Ajouter le rapini, en remuant pour bien enrober.
  • Couvrir et cuire de 3 à 5 minutes ou jusqu'à ce qu'il soit tendre. Assaisonner de sel et de poivre. Retirer du feu.
  • Arroser l'huile restante sur les moitiés de focaccia. Étaler le rapini uniformément sur la moitié inférieure de la focaccia; garnir de provolone, de mortadelle et des rondelles de piments forts. Recouvrir de la focaccia restante. Diviser en 4 portions. Servir chaud ou à température ambiante.
  • Astuce : pour un sandwich au fromage fondant, garnir de rapini et de fromage avant d'ajouter la mortadelle et les rondelles de piments forts, puis faire griller jusqu'à ce que le fromage ait fondu.

- 100g of prosciutto
- 2 cups of diced cantaloupe or honeydew (or both)
- 1 tbsp extra virgin olive oil
- Ground black pepper
- A few leaves of fresh basil
- 1/2 cup shaved pecorino or parmesan

Simply layer all the ingredients on a plate and serve with toasted sourdough or fresh focaccia!
