Beignets de légumes faciles


  • Sauce au yogourt aux fines herbes
  • 1 tasse (250 ml) de yogourt grec nature
  • 1/4 tasse (60 ml) de persil frais haché et de basilic (chaque)
  • 2 c. à table (30 ml) de ciboulette fraîche finement hachée
  • 2 c. à table (30 ml) de vinaigre de vin rouge
  • 1 gousse d'ail émincée
  • Beignets :
  • 2 tasses (500 ml) de restes de légumes finement hachés (brocoli, pois, maïs, carottes et courges)
  • 1/2 tasse (125 ml) de farine tout usage
  • 1/4 tasse (60 ml) d'oignon râpé
  • 1/4 tasse (60 ml) de persil frais haché
  • 8 tranches de Jambon rôti au four au romarin MastroMD, hachées
  • 3 œufs
  • 2 gousses d'ail émincées
  • 3/4 c. à thé (5 ml) de poudre à pâte
  • 3/4 c. à thé (4 ml) de sel
  • 1/2 c. à thé (2 ml) de poivre
  • 1/4 tasse (60 ml) d'huile d'olive, divisée


  • Sauce au yogourt aux fines herbes : mélanger le yogourt, le persil, le basilic, la ciboulette, le vinaigre, l'ail, le sel et le poivre; réfrigérer durant 30 minutes minimum et jusqu'à un maximum de 3 jours.
  • Beignets : mélanger les légumes, la farine, l'oignon, le persil, le jambon, les œufs, l'ail, la levure chimique, le sel et le poivre.
  • Chauffer la moitié de l'huile dans une grande poêle antiadhésive à feu moyen-vif. À l'aide d'un contenant à mesurer de 1/3 tasse (75 mL), déposer des boules de pâte dans la poêle, à environ 1 po (5 cm) l'une de l'autre. Cuire par lots, en retournant une fois, de 6 à 8 minutes ou jusqu'à ce que les beignets soient dorés à l'extérieur et cuits au centre, en ajoutant plus d'huile au besoin. Servir les beignets accompagnés d'une sauce au yogourt aux fines herbes comme trempette.
  • Ces beignets sont parfaits à température ambiante, mais ils peuvent  également être préparés à l'avance et conservés dans un four chaud jusqu'à 1 heure.

- 100g of prosciutto
- 2 cups of diced cantaloupe or honeydew (or both)
- 1 tbsp extra virgin olive oil
- Ground black pepper
- A few leaves of fresh basil
- 1/2 cup shaved pecorino or parmesan

Simply layer all the ingredients on a plate and serve with toasted sourdough or fresh focaccia!

Want to make this at home? You’ll need:
・Mild Cacciatore Salami
・Toasted Italian bread
・Vine tomatoes
・Salt & Pepper
・Extra virgin olive oil
・Parmigiano Reggiano cheese

Chop your tomatoes, then toss with olive oil, basil, salt, pepper, and Parmigiano Reggiano to taste. Top your bread with the bruschetta, then serve with thinly sliced cacciatore!
