Rouleaux au poulet et capocollo


  • 8 filets de poulet désossés sans peau
  • 1 c. à thé (5 ml) de sel et de poivre
  • 1/2 tasse (125 ml) de pesto aux tomates séchées au soleil
  • 8 tranches de mozzarella ou de provolone
  • 16 tranches de Capocollo MastroMD
  • 16 grandes feuilles de basilic frais
  • 1 tasse (250 ml) de farine tout usage
  • 3 œufs battus
  • 1 tasse (250 ml) de chapelure italienne assaisonnée
  • 1/3 tasse (75 ml) de fromage parmesan râpé
  • 2 c. à table (30 ml) d’huile d’olive
  • Sauce marinara réchauffée


  • Préchauffer le four à 400 °F (200 °C). Recouvrir une tôle à biscuits de papier parchemin; réserver.
  • Placer 1 filet de poulet entre deux feuilles de pellicule alimentaire, et à l’aide d’une petite casserole à fond épais, aplatissez le poulet jusqu’à ce qu’il soit d’une épaisseur uniforme et qu’il ait doublé en taille. Répéter pour tous les filets de poulet. Assaisonner de sel et de poivre.
  • Badigeonner 1 c. à table (15 ml) de pesto sur les filets de poulet. Placer une tranche de mozzarella, une tranche de capocollo et une feuille de basilic à l’extrémité d’un filet de poulet, puis le rouler fermement en rondin. Mettre la farine, les œufs et la chapelure dans trois bols différents peu profonds. Ajouter le parmesan à la chapelure; bien mélanger.
  • Rouler chaque rondin dans la farine, puis l’enrober d’œufs et de chapelure; secouer pour faire tomber l’excédent. Disposer les rondins sur la tôle à biscuits en plaçant l’ouverture vers le bas. Badigeonner d’huile d’olive.
  • Cuire au four pendant 25 à 30 minutes ou jusqu’à ce que les rouleaux soient dorés et bien cuits en les tournant une fois. Laisser reposer pendant 5 minutes. Servir les rouleaux accompagnés d’une sauce marinara chaude comme trempette.
  • Conseil : Inviter les enfants à aider à préparer le repas. Ils peuvent aider à aplatir les filets de poulet, les rouler et les enrober de chapelure.

- 100g of prosciutto
- 2 cups of diced cantaloupe or honeydew (or both)
- 1 tbsp extra virgin olive oil
- Ground black pepper
- A few leaves of fresh basil
- 1/2 cup shaved pecorino or parmesan

Simply layer all the ingredients on a plate and serve with toasted sourdough or fresh focaccia!
