INGREDIENTS

Directions

  • Start selecting your base and planning the wreath shape. Use a large round platter or cutting board as your base, or simply create the wreath directly on a clean tabletop or counter.
  • Decide on the wreath's diameter. Leave an empty circle in the center, and focus on building the charcuterie elements around this shape.
  • Lay the greenery base using fresh rosemary and fresh bay leaves form the shape of your wreath. These green herbs will create a festive, holiday look while adding fresh aromas
  • Arrange them in a circular pattern, layering the leaves and herbs to resemble the fullness of a wreath. Leave gaps for placing your ingredients on top
  • Fold or roll the specialty deli meats into small stacks. Distribute the slices evenly around the wreath, placing them directly on top of the herb base. Be sure to alternate the types of meats so you have variety around the circle.
  • Roll the Goat Cheese in fresh herbs and arrange them in clusters around the wreath. Their creamy texture will add contrast to the meats.
  • Cut the Friulano Cheese into small cubes or wedges and tuck them into the wreath in small piles for easy grabbing
  • Break the Parmesan Cheese into small chunks or shards and scatter around the wreath for a salty, crunchy cheese option.
  • Incorporate Fresh Fruits green Grapes: Keep them in small clusters for visual appeal and scatter them around the wreath. Their fresh sweetness will balance the salty and savory items
  • If Crab apples are small enough, place them whole around the wreath like ornaments. Their bright red color adds a festive touch and a tart contrast to the other flavors.
  • Add the Dried Fruits tucking a few around the wreath to add color and sweetness. Their chewy texture pairs well with the creamy cheeses and salty meats.
  • Slice the figs in half and place them at intervals around the wreath. Their rich, jammy flavor complements both the meats and cheeses beautifully.
  • Place the Crackers and Crostini in small stacks or fan them out in sections around the wreath for easy access. Add a variety of Christmas Crackers to create a festive flair, ensuring you have both soft and crunchy options available
  • Garnish with Fresh Herbs like Thyme. Sprinkle small sprigs of fresh thyme around the wreath for added fragrance and a touch of elegance. Continue to fill any gaps with extra rosemary or thyme to maintain the circular, wreath-like appearance
  • Create Balance and Visual Appeal by distributing ingredients evenly and alternating color and texture around the wreath. The meats, cheeses, fruits, and crackers should all be well-balanced in size and space.
  • Finish it with an extra touch of rosemary or bay leaves to fill any gaps and enhance the wreath shape. If you want a festive extra touch, consider adding small holiday decorations like tiny bells, cinnamon sticks, or cranberries scattered around the wreath

When pumpkin spice meets salami 👏❤️

These Mastro® Genoa Salami & brie filled pumpkins are the perfect addition to any fall board! Save this Reel to come back to this recipe when you need a little touch of fall for your menu 🍂

Pumpkin-Shaped Baked Brie with Mild Genoa Salami
Ingredients 
✦ 4–6 slices of Mastro® Mild or Hot Salami, chopped
✦ 5–6 mini brie wheels or one regular brie wheel
✦ Your choice of jam, compote, or spiced butter (a pumpkin spice butter is what’s used in the video!)
✦ Cinnamon sticks, broken into 1-inch pieces
✦ 1 sheet puff pastry, thawed

Method

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
2. Roll out the thawed puff pastry dough & prepare enough to fully wrap your mini bries or one wheel of brie.
3. Slice the brie in half horizontally & spread your choice of jam, compote, or spiced butter over the bottom half, covering the surface evenly. Then, add your chopped salami. Place the top half of the brie back on.
4. Wrap the puff pastry around the brie, pinching the dough to seal & trimming off any excess.
5. Using kitchen twine, gently wrap & tie the brie to create pumpkin-like sections. Space the twine evenly. Flip the wrapped brie over & brush it all over with egg white.
6. Bake for 20–25 minutes, or until golden brown. Let cool for 3–5 minutes, then carefully cut & remove the twine.
7. Insert a cinnamon stick into the top to resemble a pumpkin stem & enjoy!
