Carrozza means carriage in Italian. These fried mozzarella and salami sandwiches are aptly named. When you’re eating the sandwich, the stretchy mozzarella creates long strands that resemble the reins of a horse and carriage.

Ingredients

  • Sandwiches:
  • 16 slices Mastro® Mild Genoa Salami
  • 8 oz (250 g) buffalo mozzarella, thinly sliced
  • 8 slices sandwich bread, crusts removed
  • 1/2 cup (125 mL) milk
  • 1/4 cup (60 mL) all-purpose flour
  • 2 eggs, lightly beaten
  • 1/4 cup (60 mL) butter
  • 1/4 cup (60 mL) olive oil
  • Salad:
  • 6 cups (1.5 L) arugula
  • 1/4 cup (60 mL) olive oil
  • 2 tbsp (30 mL) red wine vinegar
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/3 cup (75 mL) shaved Parmesan cheese

Directions

  1. Sandwiches: Arrange salami and mozzarella over half of the slices of bread; top with remaining bread. Place milk, flour and eggs in separate shallow dishes.
  2. Meanwhile, heat butter and oil over medium-heat; working in batches, carefully dip sandwiches in milk, dredge in flour, then dip in eggs. Fry for 2 to 3 minutes per side or until golden brown and crisp.
  3. Salad: Toss together arugula, oil, vinegar, salt and pepper; top with shaved Parmesan. Cut sandwiches in half and serve with salad.
  4. Tip#1: If desired, serve with marinara sauce or basil pesto for dipping.
  5. Tip#2: Substitute regular mozzarella for buffalo mozzarella.
