Salami & Mozzarella in Carrozza
Carrozza means carriage in Italian. These fried mozzarella and salami sandwiches are aptly named. When you’re eating the sandwich, the stretchy mozzarella creates long strands that resemble the reins of a horse and carriage.
Ingredients
- Sandwiches:
- 16 slices Mastro® Mild Genoa Salami
- 8 oz (250 g) buffalo mozzarella, thinly sliced
- 8 slices sandwich bread, crusts removed
- 1/2 cup (125 mL) milk
- 1/4 cup (60 mL) all-purpose flour
- 2 eggs, lightly beaten
- 1/4 cup (60 mL) butter
- 1/4 cup (60 mL) olive oil
- Salad:
- 6 cups (1.5 L) arugula
- 1/4 cup (60 mL) olive oil
- 2 tbsp (30 mL) red wine vinegar
- 1/4 tsp (1 mL) each salt and pepper
- 1/3 cup (75 mL) shaved Parmesan cheese
Directions
- Sandwiches: Arrange salami and mozzarella over half of the slices of bread; top with remaining bread. Place milk, flour and eggs in separate shallow dishes.
- Meanwhile, heat butter and oil over medium-heat; working in batches, carefully dip sandwiches in milk, dredge in flour, then dip in eggs. Fry for 2 to 3 minutes per side or until golden brown and crisp.
- Salad: Toss together arugula, oil, vinegar, salt and pepper; top with shaved Parmesan. Cut sandwiches in half and serve with salad.
- Tip#1: If desired, serve with marinara sauce or basil pesto for dipping.
- Tip#2: Substitute regular mozzarella for buffalo mozzarella.
