1 teaspoon dried parsley, pinch of dried thyme and pinch of crushed red pepper
1/2 cup of Mastro Extra-virgin Olive Oil
1 large loaf seeded Italian bread
100 g of sliced provolone cheese
Directions
In a medium bowl, combine pimento-stuffed olives, giardiniera, capers, and their liquids, then add kalamata olives, garlic, shallot, oregano, parsley, thyme, and crushed red pepper
Stir in olive oil until well combined, then let the mixture stand for 1 hour before using.
Slice the Italian bread open, then spoon the olive salad onto both sides of the bread, spreading it evenly.
Arrange mozzarella slices on the bottom half of the bread, followed by Mastro Genoa salami, Mortadella and Capocollo.
Place provolone cheese on the top half of the bread, ensuring it covers the olive salad completely.
Carefully close the sandwich and wrap it tightly in plastic, and let the wrapped sandwich stand for 30 minutes to 2 hours.
When ready to serve, cut the sandwich into 8 pieces and serve with pepperoncini on the side, then enjoy!
